This celebrated Chinese dish gets its name from the Chinese province of Hakka. It is very quick and easy to make and perfect to serve with a gravy of your choice. . .

Ingredients


For The Chilli Oil
1/4 cup oil
5 whole dry kashmiri red chillies , broken into pieces

For The Noodles
2 cups boiled noodles
2 tbsp oil
1/4 cup finely chopped spring onions whites
2 tsp finely chopped garlic (lehsun)
2 to 3 whole dry kashmiri red chillies , broken into pieces
1/2 cup thinly sliced carrots
1/4 cup shredded cabbage
1/2 cup thinly sliced capsicum
1 tsp soy sauce
salt to taste
a pinch of black peppercorns (kalimirch) powder
2 tbsp finely chopped spring onion greens

Method
For the chilli oil

  1. Heat the oil in a deep pan on a high flame till it smokes.
  2. Add the red chillies, cover with a lid and switch off the flame.
  3. Allow it to cool for some time and strain it using a strainer. Keep aside.

For the noodles

    For the noodles
  1. Heat the oil in a wok, add the spring onion whites, garlic and red chillies and sauté on a high flame for 30 seconds.
  2. Add the carrots, cabbage, capsicum and sauté on a high flame for 1 to 2 minutes.
  3. Add the noodles, soya sauce and salt, mix well and toss on a high flame for 1 to 2 minutes.
  4. Add the black pepper powder and 2 tsp prepared chilli oil, mix well and toss on a high flame for another 2 minutes.
  5. Sprinkle spring onion greens and toss well.
  6. Serve immediately.

Chilli oil for Hakka noodles

  1. First let’s make the Chilli Oil, it elevates the taste and flavour of Hakka Noodles.
  2. On a high flame heat oil in a deep pan till it smokes.
  3. Add the broken red chillies and wait for a few seconds.
  4. Then cover the pan with a lid and switch off the flame.
  5. Let it cool for some time, then strain the oil using a strainer.
  6. Chilli oil is ready. Keep aside.

Steps to to make Hakka Noodles Recipe

  1. On a high flame heat oil in a wok. Add the finely chopped spring onion whites.

  2. Then add the finely chopped garlic, broken red chillies and sauté on a high flame for 30 seconds.
  3. Then add the sliced carrots.
  4. Add the sliced cabbage.
  5. Now add the sliced capsicum. Sauté on a high flame for 1 to 2 minutes.
  6. Add the boiled noodles. To the boiled and strained noodles always rub in some oil and keep aside, this helps to keep the noodles separate.
  7. Add soya sauce, salt to taste and mix well.
  8. Add a little black pepper powder. If you wish you can use white pepper powder.
  9. Finally add 2 tsp of the prepared chilli oil, mix well and toss on a high flame for 1 to 2 minutes.
  10. Finally sprinkle spring onion greens and toss well. Serve immediately.

Tried this recipe in the quantities mentioned. The taste was awesome. Only the quantity fell a little short for 4 people
