Amul and Nestle skim milk is 99.7% fat-free, which is almost nil fat. What you must have got is tonned milk, which usually has 33% of fat. This recipe is made using 99.7% low fat milk only.

Is the carb content right? It doesn''t make sense, where does all the carb comes from? If I use lemon instead of yogurt, will I be able to eliminate carbs?

Esha, there are about 4.5 cups milks to make 1 cup paneer and that is why the carb content is high. We will run a check again shortly. Replacing lemon instead of curd is not a good idea as the paneer can turn chewy.
