Transfer the washed dal to a deep bowl and submerge in enough water.

Cover with a lid and soak the moong dal in enough water for 4 hours.

Drain and de-skin the moong dal dal.

Transfer the dal to a mixer jar.

Add green chillies. Add more or less as per your preference or add ginger for an added flavor.

Also, add ¼ cup of water. Blend in a mixer to a coarse paste.Transfer the mixture into a deep bowl.

Add the oil. Oil helps in making soft moong dal dhokla.

Add asafoetida. Dals and pulses are a bit difficult to digest, hence a little addition of hing will help in aiding digestion.

Add sugar. Sugar is totally optional but, we want the mag ni dal na dhokla to be like the Nylon khaman dhokla which are sweet hence, we are adding the sugar.

Add besan. Besan is another healthy flour which is loaded with good fats and proteins.

How to make mag ni dal na dhokla-
For steaming the no-fermentation moong dal dhokla, grease the 200 mm. (8”) diameter dhokla plate with little oil and even put water for steaming in a steamer.

Just before steaming, add fruit salt. After adding the fruit salt, do not let the batter sit idle or else you will get hard moong dal dhoklas.

Mix lightly.

Pour batter into greased thali until 3/4 of the level is covered so as to leave room for the moong dal dhokla to rise.

Steam in a steamer for 12 to 15 minutes or till the dhokalas are cooked.

Pass a knife or toothpick through the mag na dhokla, and if the knife comes out clean, your dhoklas are done.

Brush little oil over the dhokla. Also, you can use ghee.
