Ingredients

1 cup low-fat curds (dahi) , beaten
1/2 cup cubed and boiled beetroot
1/4 cup cucumber cubes
1/4 cup deseeded and chopped tomatoes
1 tbsp chopped coriander (dhania)
1/4 tsp roasted cumin seeds (jeera) powder
salt to taste

  2. Refrigerate for ½ hour and serve chilled.

How to make Mixed Veggie Raita:

  1. To make the Mixed Veg Raita, first take a deep bowl and add the low-fat curds (dahi) into it. Beat with the help of a whisk to obtain a smooth texture.
  2. Now, add the cubed and boiled beetroot into it. Boiling the beetroots tenderizes them and gives them a better texture. Do not forget to peel the before you chop them up.
  3. Add the cucumber cubes. Make sure they are fresh and not bitter in taste.
  4. Take 1 medium sized tomato and cut in into wedges.
  5. Remove the seeds using a sharp knife as shown in the picture. Later, chop the deseeded tomatoes up into cubes.
  6. Add the chopped tomatoes into the bowl with curd and other ingredients.
  7. Now add the coriander to the Mixed Veggie Raita.
  8. Also, add the roasted cumin seeds powder to flavor the curd.
  9. Finally, add the salt to taste.
  10. Mix all the ingredients together with the help of a spoon or a whisk.
  11. Refrigerate for ½ hour and serve the Mixed Veg Raita chilled.

Good healthy raita. Use full far curds for endurance athletes as you need the fat.
