To prepare the nutritious bhel, we will first make the masala puffed rice, for that heat the oil in a broad non-stick pan. 2. Add the cumin seeds, hing, haldi and puffed rice and cook for 1 minute. 3. Remove the cooked puffed rice in a bowl and allow it to cool completely. If you use them while they are still hot, the kurmura will lose their crunch and turn soggy. 4. Then add the fresh pomegranate, tomatoes, sprouts, apples, raw mango, coriander and oranges. 5. 1 cup puffed rice (kurmura)
1/2 tsp oil
1/2 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
1/4 tsp turmeric powder (haldi)
1/2 tsp black salt (sanchal)
1/4 tsp chilli powder

Other Ingredients For Nutritious Bhel
1/2 cup fresh pomegranate (anar)
1/2 cup orange segments , cut into halves
1/2 cup finely chopped tomatoes
1/2 cup boiled mixed sprouts
1/2 cup chopped apple
3 tbsp chopped raw mangoes
1/4 cup finely chopped coriander (dhania)
4 tsp lemon juice
salt to taste

  1. Heat the oil in a broad non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, turmeric powder and puffed rice, mix well and cook on a medium flame for 1 minute.
  3. Add the black salt and chilli powder and mix well and cook for 30 seconds.
  4. Allow it to cool completely.

  2. Add all the remaining ingredients starting with fresh pomegranate. It will provide a pleasant sweetness along with a bite and work well as a substitute for sweet chutney.
  3. Add finely chopped tomatoes. You can even put some grated carrots or beetroot if you like.
  4. Add boiled mixed sprouts.
  5. Add chopped apples.
  6. Add chopped raw mango. These are optional. If in season, do add them.
  7. Add finely chopped coriander.

   Dear Twara, as mentioned in the disclaimer we recommend this recipe as an occasional treat to satisfy your craving for bhel. Moreover we have added sprouts and fruits to reduce the quantity of puffed rice and calories both. This is a sneak way of having fruits and sprouts to add in fiber to your diet also. There is no use of fried sev or papdi too in this recipe.
