Ingredients


For Spicy Tava Idlis
8 leftover idlis , cut into cubes
1 tbsp butter
1/2 tsp garlic (lehsun) paste
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1 tsp pav bhaji masala
salt to taste
1 tsp lemon juice
2 tbsp finely chopped coriander (dhania)

For The Garnish
2 tbsp finely chopped coriander (dhania)

  1. To make spicy tava idlis, heat the butter in a broad non-stick pan, add the garlic paste and sauté on a medium flame for 30 seconds.
  2. Add the onions, mix well and sauté on a medium flame for 2 to 3 minutes, or till the onions turn translucent.
  3. Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the turmeric powder, chilli powder, pav bhaji masala, mix well and sauté on a medium flame for 1 minute.
  5. Add 2 tbsp of water and salt, mix well and sauté on a medium flame for 1 minute.
  6. Add the lemon juice, coriander, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  7. Add the idlis, toss lightly and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  8. Serve the spicy tava idlis hot garnished with coriander.

What are idlis?

  1. What are Idlis? Idli is considered to be one of the healthiest breakfasts in Indian cuisine. Although it is traditionally a South Indian snack, it has now become extremely popular all over the country – and with good reason too. Idli is a steamed food, made with with a fermented batter of rice, urad dal and fenugreek seeds. White and fluffy, it is a delight to bite into. It has a mellow flavour, which gives scope for the accompaniment to shine.  Idli is a standard South Indian breakfast item in the South, supplemented with a small quantity of some other dish. What varies is the accompaniment. Usually, Idli is served with Sambar and one or more chutneys such as Coconut Chutney, Coriander Chutney or Tomato Chutney. When in a hurry, the Idli is served with dry chutney powders like Idli Milagai Podi, Coconut Powder or Curry Leaves Powder.
  2. There are different variants of Idli, made using different combinations of grains and lentils. You can try the Rice and Moong Dal IdliBarley IdliPoha IdliCooked Rice Idli and Palak Moong Dal Idli. Likewise, you can also add spices, herbs and veggies to the idli batter to make variants such as the Kanchipuram Idli and Paneer Vegetable Idli.   4. Add the onions.
  5. Mix well and sauté on a medium flame for 2 to 3 minutes, or till the onions turn translucent.
  6. Add the tomatoes. Other veggies like capsicum, bell pepper, carrots, French beans can also be used.
  7. Mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  8. Add chilli powder depending upon how spicy you want.
  9. Add the turmeric powder.

  11. Mix well and sauté on a medium flame for 1 minute. Ensure the spices do not burn or else it will taste bitter.
  12. Add 2 tbsp of water so that it’s not very dry and salt to season. Water will prevent the masalas from sticking to the pan.
  13. Mix well and sauté on a medium flame for 1 minute.
  14. Add the lemon juice for a pleasant tang.
  15. Add coriander for a burst of freshness.
  16. Mix well and cook on a medium flame for 1 minute, while stirring continuously.
  17. Add the idlis. Spicy tava idli is similar to masala pav, just that we replace bread cubes with idli cubes. The best results are achievable using cold idlis so, if you have idlis left from breakfast or dinner then you can transform them into tongue-tickling spicy tava idli. We have made idlis using this recipe for homemade soft idlis. Idli, when cooled completely, is easier to cut into cubes and does not crumble easily.
  18. Toss lightly and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  19. Garnished with coriander.
