South Indians love their South Indian breakfast and most Indians love what the South Indian eat. Idli, Dosa, Masala Dosa, Uttapam are what most of us have grown up eating.
Typically for South Indian Breakfast, they make Idlis with a fresh batter which will last for 2 to 3 days. Day 1 they will have Idlis and then Day 2 they will add little water and make Dosas or Uttapams. Once this batter is over, the cycle starts again with batter made for Idli for 3 days. Dal Vada
Deep-fried dal vada, rava vada, medu vada are some popular fritters for Southern Indian Breakfast. Most batters are enhanced with an aromatic tempering of curry leaves, urad dal, mustard seeds.
Tomato Upma
Upma is yet another popular breakfast delicacy from the South. There are endless varieties of upma like tomato upma, coriander upma, curd upma. Infact, you can even substitute with super grains like quinoa or millets like jowar.

Soft, fluffy idlis dunked in hot sambhar or rasam with a side of dry chutneys like the milagai podi or the famous coconut chutney is surely my favorite south indian breakfast. The most important factor to remember while making the idli batter is the quality of par-boiled rice and urad dal. The batter can be made in large batches and stored in the refrigerator for almost a week.

To make idlis more sumptuous, you can stuff them with vegetables and make Veg Stuffed Idlis, Stuffed Potato Idli or Double Decker Idlis. Fibre rich vegetables combine to make delicious idlis that you can enjoy fresh off the steamer with sambhar and chutney .
Leftover idlis can be transformed into delectable dishes like Idli Upma or Spicy Tava Idlis.
Stuffed Rava Idli Vegetable Sandwich
Another popular variant is the Rava idli or Sooji Idli made using semolina. They are quick & easy to make and requires no soaking or fermenting. Stuffed Rava Idli Vegetable Sandwich is a delicious variant to the regular Rava idli.

How To Make A Perfect Dosa Batter
Dosas are savoury pancakes cooked on a tava with little fat (it may be oil, butter or ghee). While dosas are typically made with a batter of rice and urad, there are several regional variants that use other pulses and grains.
Sada Dosa
From authentic Adai of Tamil Nadu, appam from Kerala, neer dosa, benne dosa of Karnataka and pesarattu of Andhra to Mumbai Roadside Dosa recipes like Spring Dosa, Cheese Dosa, Mysore Masala Dosa and the Chinese style dosa, Schezwan Chopsuey Dosa.
They can be either be crispy thin or pancake thick. You can also make instant dosas like the quick soya dosa, quick rava dosa or instant oats dosa. These require no fermenting and can be whipped up in a jiffy!
