An irresistible preparation of flat green beans (valor papdi) and fenugreek dumplings, this is the next best choice when fresh vaal or papdi is not in season.

Remember to apply the salt and soda an hour before you prepare the vegetable, to ensure the fresh green colour and smooth texture of the beans.

Valor Muthia Nu Shaak, Gujarati Sabzi recipe - How to make Valor Muthia Nu Shaak, Gujarati Sabzi

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings


3 cups valor papdi , washed and stringed
1/2 cup palak methi na muthia , cut into cubes
2 pinches of baking soda
salt to taste
3 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/2 tsp asafoetida (hing)
1 recipe coconut-coriander masala
1 tsp turmeric powder (haldi)
1 tbsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp chilli powder
2 tsp sugar

For Serving

  1. Wash the valor, drain, add a pinch of baking soda and salt in a bowl, mix well and keep aside for 5 minutes.
  2. Heat the oil in a non-stick kadhai, add the mustard seeds and asafoetida.
  3. When the seeds crackle, add the valor papdi along with 1½ cups of water and mix well.
  4. Add the coconut-coriander paste, turmeric powder, coriander-cumin seeds powder, chilli powder, sugar, another pinch of baking soda and salt (as per taste) and mix well. Cover and cook on a slow flame for 20 minutes or till the valor papdi is almost cooked, while stirring occasionally.
  5. Add the muthias one at a time and toss gently.
  6. Cover and simmer for another 2 to 3 minutes.
  7. Serve hot with rotls.

I like recipe and specifically giving details like keep papadi with soda bi carb for some time...these small things timings etc makes it perfect..some time I prepare being male your all recipe r boon for u are the Wishes we miss TARLABEN...SHE WILL STAY IMMORTAL IN HEART OF ALL..JAI SHREE KRISHNA.
