3 cups valor papdi , washed and stringed
1 cup palak methi na muthia , cut into cubes
a pinch of baking soda
salt to taste
3 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/2 tsp asafoetida (hing)
1 recipe coconut-coriander masala
1/2 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp chilli powder
2 tsp sugar

  1. To make valor muthia nu shaak, wash the valor, drain, cut into 3 equal parts and separate the seeds. Transfer into a deep bowl, add a pinch of baking soda and salt, mix well and keep aside for 5 minutes.
  2. Heat the oil in a non-stick kadhai, add the mustard seeds and asafoetida.
  3. When the seeds crackle, add the valor papdi along with 1½ cups of water and mix well.
  4. Add the coconut-coriander paste, turmeric powder, coriander-cumin seeds powder, chilli powder, sugar, salt (as per taste) and mix well. Cover and cook on a medium flame for 20 minutes or till the valor papdi is almost cooked, while stirring occasionally.
  5. Add the muthias one at a time and toss gently.
  6. Cook for another 2 to 3 minutes.
  7. Serve the valor muthia nu shaak hot with rotlas or rotis.

    1. To make palak methi na muthia, combine the spinach, fenugreek leaves and a little salt in a plate, mix well and keep aside for about 5 minutes.
    2. Squeeze out all the liquid and place the spinach and fenugreek leaves in a bowl.
    3. Add the ginger-green chilli paste, whole wheat flour, besan, semolina, cumin seeds, baking soda, sugar, salt and 1 tsp oil and knead into a very soft dough.
    4. Apply ¼ tsp of oil on your hands and divide the dough into 4 equal portions. Shape each portion into a cylindrical roll approx. 150 mm. (6") length and 25 mm. (1") in diameter.
    5. Arrange the rolls on a greased sieve and steam in a steamer for 20 to 25 minutes.
    6. Remove, cool slightly and cut into 12 mm. (½") slices and keep aside.
    7. For the tempering, heat the remaining 1 tsp of oil in a deep pan and add the mustard seeds and sesame seeds.
    8. When the seeds crackle, add the asafoetida and sauté for 15 seconds.
    9. Add the sliced palak methi na muthias, toss gently on a slow flame for 2 to 3 minutes till they are lightly browned.
    10. Serve the palak methi na muthia hot with green chutney.
