For Kela Methi Nu Shaak
1 1/4 cups bananas , peeled and roughly chopped
6 cups finely chopped fenugreek leaves (methi) leaves
3 tbsp oil
1 1/2 tsp mustard seeds ( rai / sarson)
3/4 tsp asafoetida (hing)
a pinch baking soda
salt to taste
2 1/2 tsp ginger-green chilli paste
3/4 tsp turmeric powder (haldi)
1 tsp chilli powder
2 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1 1/2 tsp sugar

    For kela methi nu shaak
  1. To make kela methi nu shaak, heat the oil in a non-stick kadhai and add the mustard seeds.
  2. When the seeds crackle, add the asafoetida and the fenugreek leaves and sauté on a medium flame for 2 minutes.
  3. Sprinkle the soda bi-carb and salt, mix well and cook on a slow flame till the fenugreek leaves become soft.
  4. Add the ginger-green chilli paste, turmeric powder, chilli powder, coriander-cumin seeds powder and sugar, mix well and cook on a medium flame for another 3 to 4 minutes, while stirring occasionally.
  5. Add the bananas, mix gently and cook on a medium flame for 1 more minute.
  6. Serve the kela methi nu shaak immediately with rotlis, white butter.
