The combination of vegetables with methi muthia in panchkutiyu shaak, makes this dish comparable to oondhiya which is made during the festival of Makar Sankranti .

We prefer to steam the palak mehti na muthia rather than deep-fry them, in an attempt to make the panchkutiyu shaak recipe healthier.

Popular amongst the Jain, panchkutiyu shaak is cooked without the use of potatoes.

Ingredients

For Panchkutiyu Shaak
1/2 cup peeled ridge gourd (turai) cubes
1/2 cup peeled potato cubes
1/2 cup peeled bottle gourd (doodhi / lauki) cubes
1/2 cup brinjal (baingan / eggplant) cubes
1/2 cup green peas
4 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/2 tsp asafoetida (hing)
salt to taste
1/2 recipe palak methi na muthias , cut into cubes

To Be Mixed Into A Masala
1/2 cup chopped coriander (dhania)
1/2 cup grated coconut
1/2 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1/2 tsp garam masala
2 tsp sugar
1/2 tbsp lemon juice
salt to taste

    For panchkutiyu shaak
  1. To make panchkutiyu shaak, first prepare the coconut and coriander masala.
  2. Heat the oil in a non-stick kadhai and add the mustard seeds and asafoetida.
  3. When the seeds crackle, add the turai, potatoes, doodhi, brinjal, green peas, salt and ¼ cup of water, cover and cook on a medium flame for 7 minutes or till the vegetables are soft, while stirring occasionally.
  4. When the vegetables are almost cooked, add the palak methi na muthias and the coconut and coriander masala and mix well.
  5. Cover and cook on a medium flame for another 5 to 7 minutes or till the vegetables are done, while stirring occasionally.
  6. Serve panchkutiyu shaak hot with rotils.

making palak methi na muthia

  1. You will have to make palak mehti na muthia first. SEE palak methi na muthia recipe | Gujarati palak methi muthia | Indian spinach and fenugreek dumplings | healthy  palak methi muthia | NOTE. don't add the tempering to the muthia as we are going to add it directly to the shaak which has its own masala. You will need to add 1/2 recipe of palak mehti na muthia to the panchkutiya shaak. Some users like to add less muthia. Also one can buy ready made muthia from the market.

coconut corinader masala for panchkutiyu shaak

  1. In a bowl put 1/2 cup chopped coriander (dhania).
  2. Add 1/2 cup grated coconut.
  3. Add 1/2 tsp chilli powder.
  4. Add 1/2 tsp turmeric powder (haldi).
  5. Add 1/2 tsp garam masala.
  6. Add 2 tsp sugar.
  7. Add 1/2 tbsp lemon juice.
  8. Add salt to taste. We added 1/2 tsp salt.
  9. Mix well.
  10. Keep aside. masala for panchkutiyu shaak.

  1. Heat 4 tablespoons oil in a non-stick kadhai.
  2. To make panchkutiyu shaak recipe | Gujarati mixed vegetables | South Gujarat mixed vegetable sabji | heat 4 tablespoons oil in a non-stick kadhai.
  3. Add 1/2 tsp asafoetida (hing).
  4. Cook for a few seconds and let the seeds crackle.
  5. Add 1/2 cup peeled ridge gourd (turai) cubes.
  6. Add 1/2 cup peeled potato cubes.
  7. Add 1/2 cup peeled bottle gourd (doodhi / lauki) cubes.
  8. Add 1/2 cup brinjal (baingan / eggplant) cubes.
  9. Add 1/2 cup green peas.
  10. Add salt to taste. We added 1/2 tsp salt.
  11. Add ¼ cup of water.
  12. Mix well.
  13. Cover and cook on a medium flame for 7 minutes or till the vegetables are soft, while stirring occasionally.
  14. Vegetables after cooking for 7 minutes.
  15. When the vegetables are almost cooked, add the palak methi na muthias. See above on how to make palak methi na muthias.
  16. Add prepared coocnut coriander masala for the panchkutiyu shaak.
  17. Mix well.
  18. Cover and cook on a medium flame for another 5 to 7 minutes or till the vegetables are done, while stirring occasionally.
  19. Serve panchkutiyu shaak | Gujarati mixed vegetables | South Gujarat mixed vegetable sabji | hot with rotils.

tips for panchkutiyu shaak

  1. You can make palak mehti na muthia the previous evening. 
  2. If you are Jain, don't add the potato cubes.
