For The Aloo Tikki
2 1/2 cups boiled and mashed potatoes
1/2 cup plain flour (maida)
1 tbsp oil
1/2 tsp cumin seeds (jeera)
2 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped onions
1/4 cup boiled green peas
1 1/4 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp coriander (dhania) powder
1/2 tsp chaat masala
2 tbsp finely chopped coriander (dhania)
salt to taste
bread crumbs for rolling
oil for deep-frying

To Be Mixed Into A Spread
1 cup mayonnaise
1 1/2 tbsp tomato ketchup
1 tbsp red chilli sauce

Other Ingredients For Aloo Tikki Burger
4 burger buns
8 tsp soft butter
1 1/2 cups shredded iceberg lettuce
4 cheese slices
12 tomato slices
12 sliced onions
salt and freshly ground black pepper (kalimirch) for sprinkling

Method

  1. Combine the plain flour and ¾ cup of water in a deep bowl and whisk well. Keep aside.
  2. Heat the oil in a broad non-stick pan and add the cumin seeds and sauté on a medium flame for 30 seconds.
  3. Add the garlic and onions and sauté on a medium flame for 1 to 2 minutes.
  4. Add the green peas and sauté on a medium flame for 1 minute.
  5. Add all the other remaining ingredients, mix well and cook on a medium flame for 2 to 3 minutes, while mashing it occasionaly.
  6. Divide the mixture into 6 equal portions and shape each portion into a circle of 75 mm. (3”) diameter and 1 cm thickness tikki.
  7. Dip each tikki in the maida- water mixture and roll in the bread crumbs till it is evenly coated from all the sides.
  8. Heat the oil in a deep non-stick pan and deep-fry each tikki till it turns golden brown in colour from both the sides. Drain on an absorbent paper and keep aside.

  2. Apply 1 tsp of butter on both the sides of each half of the burger bun and toast them lightly on a non-stick tava (griddle).
  3. Place 2 cooked burger bun halves on a clean, dry surface.
  4. Spread a little of the prepared spread on each halve and spread it evenly.
  5. Put ¼ cup of lettuce on the lower burger bun halve.
  6. Put an aloo tikki on it, 1 cheese slice, 2 tomato slices, 2 onion slices and finally sprinkle a little salt and pepper evenly over it.
  7. Cover with an upper halve of the burger bun with the buttered–spread side facing downwards and press it lightly.
  8. Repeat steps 3 to 7 to make 5 more aloo tikki burgers.
  9. Serve the aloo tikki burger immediately.

  10. Transfer the mixture into a bowl or a plate and divide into 6 equal portions. Add 1-2 teaspoon cornflour if the mixture doesn't bind. Shape each portion into a circle of 75 mm. (3”) diameter and 1 cm thickness tikki.
  11. Dip each tikki in the maida- water mixture.
  12. Roll in the bread crumbs till it is evenly coated from all the sides.
  13. Heat the oil in a deep non-stick pan and deep-fry each tikki till it turns golden brown in colour from both the sides. Alternatively, though this will not give you a crunchy texture if you want, you can shallow fry/ pan fry the tikkis instead of deep-frying. In this case, do not coat them in flour-breadcrumbs. Just add little corn flour or rice flour in tikki mixture.
  14. Drain the aloo tikkis on an absorbent paper and keep aside.

Hi Tarla Mam, Had made this recipe today & it turned out yummy. I had to make a change i.e. instead of maida had to use corn flour paste for binding as with maida the tikki was coming out while frying.

   Hi, Use the maida mixture only to coat it. If your oil is not hot enough, it will come out while frying. Make sure it is nice and hot.

This burger is loved by me a lot so when I came across this recipe i badly wanted to try it but also at the same time was very nervous how will it taste...But it tasted v good and so similar to Mc Donalds.
