Aloo Tikki Burger recipe with step by step photos
How to make aloo tikki- Combine the plain flour and ¾ cup of water in a deep bowl and whisk well. Keep aside.
- Heat the oil in a broad non-stick pan and add the cumin seeds and sauté on a medium flame for 30 seconds.
- Add the garlic.
- Add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the green peas and sauté on a medium flame for 1 minute.
- Add boiled and mashed potatoes. To perk up the tikki mixture, you can add grated carrots or boiled & mashed French beans, beetroot, corn or any other vegetables of your choice.
- Now add chilli powder, turmeric powder and coriander powder.
- Furthermore, add chaat masala.
- Finally, add finely chopped coriander and salt to taste. Mix well and cook on a medium flame for 2 to 3 minutes, while mashing it occasionally.
- Transfer the mixture into a bowl or a plate and divide into 6 equal portions. Add 1-2 teaspoon cornflour if the mixture doesn't bind. Shape each portion into a circle of 75 mm. (3”) diameter and 1 cm thickness tikki.
- Dip each tikki in the maida- water mixture.
- Roll in the bread crumbs till it is evenly coated from all the sides.
- Heat the oil in a deep non-stick pan and deep-fry each tikki till it turns golden brown in colour from both the sides. Alternatively, though this will not give you a crunchy texture if you want, you can shallow fry/ pan fry the tikkis instead of deep-frying. In this case, do not coat them in flour-breadcrumbs. Just add little corn flour or rice flour in tikki mixture.
- Drain the aloo tikkis on an absorbent paper and keep aside.
For the aloo tikki burger spread- In a bowl take mayonnaise, add tomato ketchup to it.
- Then add red chilli sauce and mix well. Keep aside.
Steps to make homemade aloo tikki burger- Cut each burger bun horizontally into two. Make burger buns at home. You can also use multigrain or whole wheat buns for a healthier option.
- Apply 1 tsp of butter on both the sides of each half of the burger bun. Toast them lightly on a non-stick tava (griddle).
- Place 2 cooked burger bun halves on a clean, dry surface.
- Spread a little of the prepared spread on each half and spread it evenly. Instead of the spread we have suggested, you can simply spread mayonnaise, cheese spread, mint mayo.
- Put ¼ cup of lettuce on the lower burger bun halve. If lettuce leaf is not available, use steamed cabbage leaf.
- Put an aloo tikki on it.
- Then place a cheese slice.
- Then put 2 tomato slices, 2 onion slices and finally sprinkle a little salt and pepper evenly over it.
- Cover with an upper half of the burger bun with the buttered–spread side facing downwards and press it lightly.
- Repeat steps 1 to 9 to make 5 more burgers. Serve the homemade aloo tikki burger immediately with French fries or potato wedges.
- Other options for sides are masala French fries, potato chips or a light salad like the Cabbage Salad or the Pear and Pomegranate Salad
- You can make them in small size and serve as a party starter.
- The aloo tikki tastes delicious as it is. So you can ditch the bun and relish them with a dip.
