Ingredients

4 cups cooked rice (chawal)
3/4 cup pineapple cubes
3/4 cup coconut milk (nariyal ka doodh)
1/4 cup readymade pineapple juice
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped fresh red chillies
1 tbsp butter
1 tsp cumin seeds (jeera)
salt to taste

    Method
  1. Combine the rice, coconut milk, pineapple juice, coriander and red chillies in a deep bowl and mix well. Keep aside.
  2. Heat the butter in a non-stick deep pan and add the cumin seeds.
  3. When the seeds crackle, add the rice-coconut milk mixture, pineapple cubes and salt, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Serve immediately.
