how to make stuffing for lifafa paratha
  1. In a deep bowl 1 cup grated paneer (cottage cheese).
  2. Add 1 cup grated cauliflower. Cauliflower has a mild, slightly sweet, and earthy flavor that pairs well with the savory taste of paneer (Indian cottage cheese). This creates a well-rounded and interesting flavor profile in the paratha filling.

  3. Add ¼ cup finely chopped onions. Onions release moisture while cooking, which helps to prevent the stuffing from becoming dry and crumbly. Finely chopped onions can introduce a very slight textural variation within the stuffing.
  4. Add 1½ tsp finely chopped green chillies. Green chillies add a touch of heat to the paratha, but in a more subtle way compared to red chilli powder.
  5. Add 2 tbsp finely chopped coriander (dhania). Coriander leaves add a bright, fresh, and slightly citrusy flavor profile to the paratha filling.
  6. Add salt to taste. We added 1/2 tsp salt.
  7. Add freshly ground black pepper to taste. We added 1/4 tsp kalimirch.
  8. Add ¼ tsp garam masala. The warm spices in garam masala complement the savory taste of cauliflower and the mild flavor of paneer (Indian cottage cheese).
  9. Add 1 tsp chaat masala.

  10. Mix well.

  11. Divide into 7 equal portions.
