For The Coconut Sauce

  2. Put the 10 spinach (palak) leaves in enough hot water.
  3. Allow them to blanch for 1 to 2 minutes and then drain.
  4. Cool in cold water.
  5. Remove and put the spinach in a mixer.
  6. Blend  to a smooth purée.
  7. Keep aside spinach ( palak ) puree.
  8. In a bowl put 1 cup readymade idli batter.
  9. Add spinach purée.
  10. Add salt to taste. We added 1/4th tsp salt.
  11. Mix well.
  12. Grease the mini idli tray with oil.
  13. Pour a little batter into each greased mini idli mould, about 3/4th tsp of batter. Note that one tray makes 18 small idlis.
  14. Fill 3 to 4 mini idli trays with the batter.
  15. Put in an idli steamer and cover and cook with a lid.
  16. Steam in a steamer for 8 minutes.
  17. Cool and demould with a teaspoon.
  18. Keep aside palak idlis.
