1 cup rice flour (chawal ka atta)
1 tbsp butter
1/2 tsp cumin seeds (jeera)
1/2 tsp black sesame seeds (kala til)
salt to taste
oil for frying

Method

  1. To make instant butter chakli, in a deep pan boil 1 cup of water.
  2. Once boiled, add butter, cumin seeds, black sesame seeds and salt to taste.
  3. Now add rice flour, cook on medium flame for 2 minutes while stirring continuously.
  4. Switch off the flame, cover and keep aside for 5 minutes.
  5. Transfer the mixture into a big thali and knead to form a soft dough.
  6. Take a portion of the dough and place it into a chakli “press” and cover it with the lid.
  7. Press out 75 mm. (3”) diameter round swirls of chakli.
  8. Heat the oil in a deep non-stick pan, deep fry the chaklis on a medium flame, till they turn golden brown in colour and crisp from both the sides. Drain on an absorbent paper.
  9. Cool the instant butter chakli and store in an air-tight container.
