Kairi ki Chutney

When raw mangoes are in season, they are used to make pickles, chutneys, drinks, eaten raw with salt and spice and used for garnishing too. Kairi ki Chutney can be made combining raw mangoes with various ingredients like coriander, onions, peanuts etc. I have made Kairi ki Chutney with a lovely combination of raw mangoes,


coconut, garlic and chillies. The coconut helps mellow and balance the sour and spicy flavours and gives a creamy mouth-feel.

Ingredients

2 medium size raw mangoes
1/4 cup fresh grated coconut
5 to 6 whole dry kashmiri red chillies
2 hot dry red chillies (pandi)
jaggery (gur) (optional)
2 pods peeled garlic (lehsun)
salt to taste

  1. Wash and peel the raw mangoes and cut into peices.
  2. Soak the chillies in water for 30 minutes.
  3. Combine all the ingredients in a mixer and blend using a little water to a smooth paste.
  4. Serve with snacks, rotis and rice.
