What are Dhoklas? Dhokla is a soft and fluffy steamed snack from the Gujarati repertoire. This all-time favourite is enjoyed as a starter, as a tea-time snack, or even for breakfast. Basically, something you can have any time you are hungry!
There are innumerable dhokla recipes falling under different types, so you can make this snack multiple times a week and still not get bored. Some dhokla batters like the healthy Moong Dal Dhokla require grinding and fermentation, while others like the Rava Dhokla are quick-fix options that you can simply mix and steam. Batter for khaman dhokla-

Add semolina for a grainy mouthfeel.

Add citric acid. You can even make use of lemon juice as a substitute.

Add sugar. Since we are not putting the sugar - water tempering in this instant dhokla recipe, we will be adding the sugar in batter itself.

Add ginger-green chilli paste. We have made one using this recipe of Ginger Green Chilli Paste.

Add salt with ¾ cup of water.

Mix well till no lumps remain and our khaman dhokla batter is ready.

Just before cooking the instant khaman dhokla, add the fruit salt.

Pour 1 tbsp of water over it. This will activate the fruit salt.

When the bubbles form, mix gently. If you stir vigorously, the bubbles will escape and the dhoklas will be dense and flat.
How to microwave dhokla-
To cook khaman dhokla in a microwave, grease 150 mm. (6") diameter microwave safe dish with oil.

Pour half the batter into it. Always fill up only 75% (height) of the dish. The dhoklas grow substantially in volume and become fluffy.

Microwave on high for 2 minutes. Usually I prepare khaman dhokla in a steamer using this recipe but, when I have less time, this microwave khaman dhokla and Microwave Mug Dhokla Recipe comes really handy.

Repeat step 2 and 3 to make one more batch of khaman dhoklas.

Poke a toothpick or knife to check if the microwave khaman dhokla | instant khaman dhokla | quick Gujarati besan dhokla | has cooked completely, else cook for a minute again in microwave. Keep aside.
For the tempering-
To temper microwave khaman dhokla | instant khaman dhokla | quick Gujarati besan dhokla | heat the oil in a microwave safe bowl for 1 minute.

Add green chillies and asafoetida.

Microwave on high for 1 minute.

Pour equal quantities of the tempering over both the batches of steamed dhoklas.

Cut into squares, diamond or rectangular pieces.

Garnish with coriander. Also, you can garnish with freshly grated coconut.
