Ingredients


For The Stuffing
1 onion
1 tomato
2 tsp chopped ginger (adrak)
7 garlic (lehsun) cloves
2 green chillies
1 cup coriander (dhania)
salt to taste
1 tsp chilli powder
1 tsp turmeric powder (haldi)
1 tbsp coriander (dhania) seeds powder

Other Ingredients
200 gms ladies finger (bhindi)
2 tbsp oil
1 onion , sliced
1 tomato , chopped
salt to taste
2 potatoes , cut into roundles

For The Garnish
1 tbsp chopped coriander (dhania)

Method
For the stuffing

  1. Combine the onion, tomatoe, green chillies, ginger, garlic and coriander and blend in a mixer till smooth.
  2. Transfer the paste in a deep bowl and add the chilli powder, salt, turmeric powder and coriander seeds powder and mix well.
  3. Keep aside.

How to proceed

  1. Wash the ladies finger, dry it on a tissue paper, cut the head and the pionted end.
  2. Make a horizotal slit in the middle of the ladies finger for the stuffing.
  3. Stuff the ladies finger with the prepared stuffing and keep aside.
  4. Heat the oil in a pan, add the onions and saute till they turn translucent.
  5. Add the tomatoe and salt, mix well and saute on a medium flame for 2 minutes
  6. Add the ladies finger and potatoes, cover and cook on a slow flame for 10-15 minutes, stirring occasionally.
  7. Sprinkle little water if the mixture is getting too dry. When the potatoes is completely cooked, remove from the flame.
  8. Serve hot and garnished with coriander.
