Ingredients

16 readymade tarts
8 tsp grated processed cheese

For The Refried Beans Mixture
3/4 cup soaked , boiled and mashed rajma (kidney beans)
1 tbsp oil
1/2 cup finely chopped spring onion whites and greens
1 tsp finely chopped garlic (lehsun)
1/2 tsp finely chopped green chillies
1/2 cup finely chopped tomatoes
1/2 tsp chilli powder
2 tbsp tomato ketchup
salt to taste

To Be Mixed Into A Sour Cream
1/4 cup thick curds (dahi)
1/2 tsp lemon juice
salt and freshly ground black pepper (kalimirch) to taste

For The Garnish
1/4 cup finely chopped spring onion whites and greens

Method
For the refried beans mixture

    For the refried beans mixture
  1. Heat the oil in a broad non-stick pan, add the spring onion whites and greens, garlic and green chillies and sauté on a medium flame for 1 minute.
  2. Add the tomatoes, chilli powder, tomato ketchup, salt and 2 tbsp of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  3. Add the rajma, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

  1. Take a tart, fill it up with ½ tbsp. Of the prepared refried beans mixture, top it with ½ tsp of sour cream and finally ½ tsp of cheese evenly over it.
  2. Repeat step 1 to make 15 more tarts.
  3. Serve immediately garnished with spring onion whites and greens.

Mexican tarts are not only visually appealing but they taste incredibly good too! The tangy tomato mixes well with the rest of the relatively subtle flavours. Making the flour tarts proved to be a challenging job for me, but they were delicious indeed!
