Mini Beetroot Pancake

These Mini Beetroot Pancakes are all the more wondrous because they pack in more protein from soya flour, vitamins from beetroot and iron from til. Even kids who do not like beetroot will surely indulge in these pancakes as they are colourful and yummy!

Ingredients

2 tbsp boiled , peeled and grated beetroot
1/4 cup rice flour (chawal ka atta)
2 tbsp urad dal (split black lentil) flour
2 tbsp soya flour
1/2 tsp chilli powder
1 1/2 tsp sesame seeds (til)
salt to taste
3 1/2 tsp oil for greasing and cooking

Method
    Method
  1. Combine all the ingredients along with approx. 1¼ cups of water in a deep bowl and mix well to get a batter of pouring consistency.
  2. Grease a non-stick mini uttapa pan using ½ tsp of oil.
  3. Pour 2 tbsp of the batter in each uttapa mould.
  4. Cook all the pancakes using 1 tsp of oil till they turn golden brown in colour from both the sides.
  5. Repeat steps 3 and 4 to make more mini pancakes in 2 more batches.
  6. Allow the pancake to cool completely, wrap in an aluminium foil and pack in a tiffin box. Serve immediately.

Nice and colourful mini pancakes which are sure to appeal people of all ages...I liked the idea of using soya flour and urad dal flour as compared to besan which is used in most pancakes.

I always believe that colours appeal all the kids....and if you try to add the natural colours....using beetroot or spinach..you are also giving your kids nutrition in the form of small pancakes...loved it..damn easy and tasty!!
