Ingredients


To Be Ground Into A Masala (makes Approx. 1 Cup)
1 cup sprouted moong (whole green gram)
3/4 cup chopped coriander (dhania)
2 tsp chopped green chillies
2 tsp chopped ginger (adrak)
2 tsp chopped garlic (lehsun)
1 tbsp lemon juice
salt to taste

Other Ingredients
3/4 cup peeled potato cubes
3/4 cup brinjal (baingan / eggplant) cubes
1/2 cup bananas cubes
1 cup chopped surti papadi (fresh vaal)
1 cup peeled and chopped purple yam (kand)
2 tbsp oil
2 tsp carom seeds (ajwain)
1/4 tsp asafoetida (hing)
1 tsp turmeric powder (haldi)
1 tbsp chilli powder
1 tbsp sugar
salt to taste

For The Garnish
1/4 cup chopped coriander (dhania)

Method
    Main procedure
  1. Combine together the potatoes, brinjals, bananas, surti papdi, yam and the prepared masala, mix well and keep aside for 15 minutes.
  2. Heat the oil in a pressure cooker, add the carom seeds and asafoetida and sauté for a few seconds.
  3. Add the vegetable-masala mixture, turmeric powder, chilli powder, sugar, salt and 1 cup of water, mix well and pressure cook for 3 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Serve hot garnished with coriander.
