For Paneer and Vegetable Appe
1 1/4 cups dosa batter
1/4 cup finely chopped capsicum
1/2 cup grated paneer (cottage cheese)
1/4 cup finely chopped onions
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
salt to taste
1 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1 tsp sesame seeds (til)
oil for greasing and cooking

Method
For paneer and vegetable appe

  1. To make paneer and vegetable appe, in a deep bowl, add dosa batter, capsicum, paneer, onions, coriander, green chillies and salt and mix well. Keep aside.
  2. In small non-stick pan, heat oil and add mustard seeds, sesame seeds and curry leaves and sauté on a medium flame for a few seconds.
  3. Pour the tempering over the batter and mix well.
  4. Heat the appe mould on a medium flame and grease it using little oil.
  5. Pour approx. ½ tbsp of the batter into each of the 7 moulds.
  6. Cover with a lid and cook for 2 minutes.
  7. Apply little oil and turn over and cook on another side for 2 minutes or till they turn golden brown in colour on the lower surface.
  8. Repeat steps 4 to 7 to make 14 more appes in 2 more batches.
  9. Serve paneer and vegetable appe immediately with green chutney and tomato ketchup.
