2 cups pistachios
1 cup sugar
2 tbsp milk powder
2 1/2 tsp ghee
1 tbsp pistachio slivers for garnish

  2. Add the pista in a mixer jar and blend it to make a coarse powder. Keep aside.
  3. Combine sugar and water in broad nonstick pan, cook it on a medium flame for 5 to 8 minutes until it becomes 1 string consistency.
  4. Add the powdered pistachio and milk powder, mix well and cook it on a medium flame for 3 to 4 minutes, while stirring continuously.
  5. Add the ghee and cook it further for 2 minutes until it combines all together to form a lumpy mixture.
  6. Transfer the mixture into a greased tin and spread it evenly.
  7. Sprinkle the pista flakes and slightly flatten it evenly using a spatula.
  8. Allow it to cool completely for 1 hour. Once set, loosen the sides using a sharp knife.
  9. Demould it and cut into 9 equal square pieces.
  10. Serve pista barfi immediately.

Is the cup of pistachios with or without the shells. If I’m using already shelled pistachios should it be half a cup instead of a cup?

Hi Is it a good idea to replace white sugar with brown sugar? Also, How long does it stay good at room temperature? Shall I refrigerate it to store for a longer time?
