Ingredients
3 cups cooked conchiglie ( shell pasta)
1/2 cup paneer (cottagte cheese) cubes

To Be Mixed Into A Pesto Dressing
1/2 cup finely chopped walnuts (akhrot)
1/2 cup chopped basil leaves
2 tbsp grated garlic (lehsun)
3 tbsp lemon juice
5 tbsp olive oil
salt to taste

    Method
  1. Combine the conchiglie and paneer in a deep bowl, mix well and refrigerate for at least 1 hour.
  2. Just before serving, add the pesto dressing to the pasta-paneer mixture and toss gently.
  3. Serve immediately.

Walnut pesto was an interesting combination... and a great variation the the classic Pine nut pesto recipe... also the paneer was a great addition.. the flavors were simple yet so aromatic... the freshness of the basil... the nuttiness from the walnuts and the punch from the garlic and olive oil was a great experience.
