Different states have different homely ways of cooking dal, but one commonality is that most of these are quick and easy to prepare so they can be prepared without much ado on a routine basis.
For preparing the spicy mixed dal-
For preparing the spicy mixed dal, we will be using 5 varieties of dal. You can use a combination of any dal that is easily available and mostly consumed in your household. We will first clean, pick and measure the yellow moong dal (split yellow gram), masoor dal (split red lentil), urad dal (split black lentils), chana dal (split bengal gram) and toovar (arhar) dal.

Wash all the dals very well. Additionally, you can put some rajma and kabuli chana too.

Immerse in clean water.

Cover with a lid and soak for 1 hour. If making in large quantity, soak the dals for a longer period of time.

After an hour, drain the dals.

For cooking the spicy mixed dal, we will now pressure cook the dals so add the soaked and drained dals in a pressure cooker. You can even cook them in an open pan until soft but, that takes a longer period of time.

Add 2 cups of water.

Mix well and pressure cook for 3 whistles or until the dals are cooked.

Allow the steam to escape naturally before opening the lid.This helps in internal cooking of the dal under pressure. Also, if you open the cooker while steam due to pressure is still inside, you might get burned.

For preparing the restaurant style mixed dal, heat the ghee in a deep non-stick kadhai. Ghee can be swapped with oil or butter.

When the ghee is hot, add the cumin seeds.

Sauté on a medium flame for 1 minute or till the raw aroma of adrak-lehsun paste goes away.

Add the tomatoes. Use best quality, red ripe tomatoes to get a flavorful dal.

Add 2 tbsp of water for the tomatoes to cook faster and have a mushier consistency.

Mix well and cook on a medium flame for 2 minutes.

Add the garam masala. I made a fresh batch of garam masala yesterday which I will be using to enhance the flavour of spicy mixed dal.

Add the coriander-cumin seeds powder. During summers, I dry (roast) dhania-jeera in sunlight and ground it to make homemade dhania-jeera powder which I generally use in most of my Indian dal recipes.

Add the chilli powder. Adjust according to the spice level you prefer.

Mix well and cook on a medium flame for 2 more minutes.

Add the curd. The protein in this recipe comes from the various dals while yogurt helps in providing calcium making this spicy mixed dal a healthy recipe.

Add the coriander.

Mix well and cook on a slow flame for 1 to 2 minutes, while stirring continuously.

Serve the spicy mixed dal hot with rotis or parathas. To perk up the dal or to make it Punjabi dal tadka style, you can even give a second tempering/ chaunk (tadka) to the spicy dal.
