Ingredients


For The Dough
1 cup maize flour (makai ka atta)
2 tsp oil
salt to taste
1/4 tsp oil for kneading

To Be Mixed Into A Stuffing
1/2 cup fresh grated paneer (cottage cheese)
1/4 cup boiled and crushed green peas
1/4 cup finely chopped coriander (dhania)
1 tsp green chilli paste
salt to taste

maize flour (makai ka atta) for rolling
oil for cooking

  1. Combine all the ingredients in a deep bowl and knead into soft dough using enough water. Keep aside for 10 to 15 minutes.
  2. Knead again using a little oil till it is smooth. Keep aside.

  1. Divide the stuffing in 4 equal portions and keep aside.
  2. Divide the dough into 4 equal portions and roll out each portion of the dough into a circle of 200 mm (8”) diameter, using a little maize flour.
  3. Put 1 portion of the filling on one half of the roti and fold it over to make a semi-circle and press it lightly to seal it.
  4. Heat a non-stick tava (griddle) and cook the paratha, using a little oil, till it turns golden brown in colour from both sides.
  5. Repeat with the remaining dough and filling to make 3 more parathas.
  6. Serve immediately.

  1. For a variation, add greens like shredded cabbage, chopped fenugreek leaves, etc. To the dough instead of spinach.
