Is there an alternate to green garlic in the recipe? We understand that green garlic is seasonal and hence you can use regular garlic to make turiya patra recipe | turiya patra nu shaak | Gujarati turiya patra | Green garlic is available in the winter months in India.
Preparation for Turiya Patra-
To make turiya patra recipe | turiya patra nu shaak | Gujarati turiya patra | clean and wash turiya and lightly peel the skin & discard it. You can also use smooth gourd in place of ridge gourd in this sabzi.

Place the turai on a chopping board and cut into cubes. Keep aside.

Along with turiya, we will be using patra. You can buy readymade patra from a farsan store or make fresh at home by referring our detailed recipe with step by step images of patra.

Cut 6 to 8 patra depending upon their size into cubes and keep aside.
For coconut-coriander masala-
To make coconut-coriander masala for turiya patra recipe | turiya patra nu shaak | Gujarati turiya patra | in a deep bowl take 1 cup of freshly grated coconut.

Add finely chopped coriander.

Add finely chopped green garlic. This is generally available in winter season so, in the off season you can use regular garlic instead of hara lehsun.

Add coriander-cumin seeds powder. We have used homemade.

Add ginger-green chilli paste.

Furthermore, add chilli powder.

Add sugar.
-
Add lemon juice.
-
Add salt to taste.

Combine all the ingredients and mix well. Keep aside.
How to make Turiya Paatra-
To make turiya patra | turiya patra nu shaak | Gujarati turiya patra |, heat the oil in a non-stick kadhai.

Once the oil is hot, add the cumin seeds.

When the seeds crackle, add the ridge gourd.

Add asafoetida.

Add soda bi–carb. This helps in retaining the green colour in our turiya paatra nu shaak.

Add 1 cup of water and mix well.

Cover and cook on a medium flame for 5 minutes.

Add prepared coconut-coriander paste.

Add turmeric powder.

Add salt.
-
Mix well and cook on a medium flame for another 5 minutes or till the ridge gourd becomes tender, stirring occasionally.

Add paatra. In fact, turiya pairs well with muthiya also you can toss them in this Vatana Muthia Nu Shaak.

Add sugar. This is optional since, we have already added little sugar in coconut-coriander paste. Also, you can use jaggery instead of sugar at this stage.

Toss gently and simmer for 2 minutes, while stirring once in between. Do not stir vigorously or else our patra will break more.
