Ingredients

For Veg Toast Sandwich
8 bread slices
4 tsp butter for spreading
8 tsp green chutney
20 yellow cucumber slices
16 boiled potatoes slices
salt for sprinkling
2 tsp sandwich masala
16 tomato slices
8 sliced onions
8 capsicum slices
4 boiled beetroot slices
1 tsp butter for brushing
2 tsp butter for greasing
2 tsp butter for topping
2 tsp green chutney for topping
4 tbsp sev for topping

Method

For veg toast sandwich

    For veg toast sandwich
  1. To make veg toast sandwich, place 2 bread slices on a clean dry surface, apply ½ tsp of butter on each bread slice and spread it evenly.
  2. Spread 1 tsp of green chutney on each buttered bread slice and spread it evenly.
  3. Arrange 5 cucumber slices on one buttered-chutney bread slice, place 4 potato slices over it and sprinkle a little salt and ¼ tsp of sandwich masala evenly over it.
  4. Arrange 4 tomato slices, 2 onion slices, 2 capsicum slices and 1 beetroot slice evenly over it. Finally sprinkle a little salt and ¼ tsp of sandwich masala evenly over it.
  5. Cover it with another slice of bread, with the buttered-chutney side facing downwards and press it lightly.
  6. Spread ¼ tsp of butter evenly over it.
  7. Grease a sandwich toaster on both the sides using ½ tsp of butter.
  8. Place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
  9. Cut the veg toast sandwich into 6 equal pieces, place it on a plate and apply ½ tsp of butter and ½ tsp of green chutney evenly over it.
  10. Finally sprinkle 1 tbsp of sev evenly over it.
  11. Repeat steps 1 to 10 to make 3 more veg toast sandwiches.
  12. Serve the veg toast sandwich immediately with tomato ketchup and green chutney.

Preparation for the vegetable toast sandwich

  1. For smearing on bread slices, you need to make a spicy green chutney. Check out this recipe with detailed step by step photos and make Mumbai road-side green chutney recipe.
  2. You would also require a tangy masala to sprinkle on the vegetables. Refer this recipe and make Sandwich Masala at home.

How to make Veg Toast sandwich

  1. To make the veg toast sandwich, place 2 bread slices on a clean dry surface. We have used big white bread slices. You can also use Multigrain Bread or Whole Wheat Bread. You can lightly trim off the edges from the bread if you want.
  2. Apply ½ tsp of butter on each bread slice and spread it evenly.
  3. Spread 1 tsp of green chutney on each buttered bread slice and spread it evenly.
  4. Arrange 5 cucumber slices on one buttered-chutney bread slice. Before placing the cucumber, just taste 1 from the batch to ensure it is fresh and not bitter.
  5. Place 4 potato slices over it. We have boiled the aloo in pressure cooker, peeled & sliced them medium thick before placing. Another popular variety of the Mumbai roadiside sandwich is the Veg masala toast sandwich which makes use of a potato masala/potato sabzi instead of plain boiled potatoes.
  6. Sprinkle a little salt and ¼ tsp of sandwich masala evenly over it.
  7. Arrange 4 tomato slices.
  8. Also, put 2 onion slices. If you are Jain, skip adding this & put some shredded cabbage instead.
  9. Place 2 capsicum slices. You can use bell pepper to make it more colorful.
  10. Furthermore, place 1 beetroot slice evenly over it. We have boiled the beetroot too before adding but, you can keep it raw if you like that extra crunch. To make a cheese vegetable toast sandwich, add a cheese slice or grated cheese over the beetroot slice at this stage.
  11. Finally sprinkle a little salt and ¼ tsp of sandwich masala evenly over it.
  12. Cover it with another slice of bread, with the buttered-chutney side facing downwards Press it lightly.
  13. Spread ¼ tsp of butter evenly over it.
  14. Grease a sandwich toaster on both sides using ½ tsp of butter. If you don’t have a hand toaster, make use of an electric toaster or sandwich griller.
  15. Place the sandwich in the sandwich toaster.
  16. Cook on a medium flame, till it turns brown and crisp from both sides. Our veg toast sandwich is ready!
  17. Cut the vegetable toast sandwich into 6 equal pieces.
  18. Place the toasted veg sandwich on a plate and apply ½ tsp of butter.
  19. Also, apply ½ tsp of green chutney evenly over it. To make it spicy, also smear red garlic chutney over the toast sandwich.
  20. Finally sprinkle 1 tbsp of sev evenly over it. You can also drizzle ketchup if you like.
  21. Repeat steps 1 to 21 to make 3 more Bombay style veg toast sandwich.
  22. Serve the Bombay vegetable toast sandwich with tomato ketchup and green chutney.

I often crave for a roadside sandwich and when I tried this recipe I was surprised that this can be made at home also....
