  1. Combine ¾ cup of coconut milk and plain flour in a bowl, whisk well and keep aside.
  2. Heat the ghee in a deep non-stick pan, add the cumin seeds, slit green chillies and curry leaves and sauté on a medium flame for 30 seconds.
  3. Add the vegetables and sauté on a medium flame for 2 minutes.
  4. Add the remaining ½ cup of coconut milk, ½ cup of water and salt, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
  5. Add the coconut milk-plain flour mixture and sugar, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Serve hot with rice.
