To make ajwain roti, combine all the ingredients in a deep bowl and mix well. Add enough water (approx. ¾ cup) and knead into a soft dough. Cover the dough with a lid and keep aside for 15 minutes. Divide the dough into 10 equal portions and roll out each portion of the dough into a 175 mm. (7”) diameter circle using a little whole wheat flour for rolling. Heat a non-stick tava (griddle) and cook the roti using a little ghee, till golden brown spots appear on both the sides. Serve immediately.

Dough for ajwain roti | ajwain paratha

  1. To make ajwain roti | ajwain paratha | in a deep glass bowl add 2 cups whole wheat flour (gehun ka atta).
  2. Add 1 tablespoon carom seeds (ajwain).
  3. Add 3  teaspoons oil.
  4. Add salt to taste.
  5. Add enough water to make a soft dough. We have used roughly 3/4 cup of water to make the dough.
  6. Mix well.
  7. Knead into a soft dough.
  8. Cover the dough with a lid and keep aside for 15 minutes.
  9. This is what the dough looks like.
  10. Roll the dough into cylinderical shape. This makes it easier to make the dough balls of equal shape. 
  11. Divide the dough into 10 equal portions. 

Rolling the ajwain roti | ajwain paratha

  1. Dust some flour on the dough ball. 
     
  2. Softly flatten the dough ball with a belan (roller).
  3. Roll out each portion into a 175 mm. (7") diameter circle using a little whole wheat flour for rolling. 

Making the ajwain roti | ajwain paratha

  1. Heat a non-stick tava (griddle).
  2. Place the rolled roti on the tava and cook for 10 to 15 seconds.
  3. Flip over and cook the other side of the roti for 10 to 15 seconds.
  4. Apply ghee on the roti with a brush.
  5. Cook roti applying a little downward pressure with a spatula.
  6. Flip over roti and cook again. Your roti is ready.

I love this ajwaini roti, flavourful, have it hot straight from the tava, with curd. Also can be had with any subziz.
