For the dough of bajra roti-
To prepare the dough of bajra roti, in a deep bowl, add the bajra flour. Bajra flour is good for heart, diabetes and cholesterol. The flour is gluten-free and also helps relieve constipation.

Add whole wheat flour.

Add salt.

Gradually add approx. ¾ cup of warm water. Warm water helps gluten-free bajra flour to bind, making the dough pliable and easy to roll.

Combine all the ingredients and knead into a soft dough. If the bajra roti dough becomes sticky then add more flour if the dough is dry, then add some water.

How to make Bajra Roti-
To make Bajre ki roti, take a portion of the dough and shape into a round ball. The dough ball should be smooth without any cracks. If required, you can apply some water on your palms and then shape. Flatten it between your palm, dip into whole wheat flour & remove excess flour

Place it on a rolling board and roll out the portion of the dough into a 150 mm. (6") diameter thick roti using a little whole wheat flour for rolling. You can shape the bajra roti by pressing out a circle with your hand as well.

Heat a non-stick tava (griddle), place the sajje rotti over it.

Cook it for a few seconds or till a few blisters appear on top. If there are cracks forming on the bajra roti, apply a little water on top and then flip.

Lift the pearl millet roti with a pair of flat tongs and roast over an open flame till brown spots appear on both sides.

Ingredients for Jowar Roti
1 cup jowar (white millet) flour
salt to taste
Method for Jowar Roti

Heat ¾ cup of water in a deep non-stick pan, switch off the flame, add the jowar flour and mix well. Keep aside to cool slightly.

Transfer the mixture into a deep bowl and knead into a soft dough using 1 to 2 tbsp of water if needed.

Divide the dough into 7 equal portions.

Take a portion the dough, flatten it slightly and place it on a dusted rolling board and roll with your hands into a 125 mm. (5”) diameter circle.

Heat a non-stick tava (griddle) on a medium flame and when hot, place the roti gently over it.

Cook it till small blisters appear on the surface. Turn over the roti and cook for few more seconds.

Cook it on an open flame till it puffs up and brown spots appear on both the sides.

Repeat steps 4 to 7 to make 6 more jowar rotis.

Serve jowar roti immediately.
