These days avocadoes are available in most supermarkets and fruit stalls, almost all round the year. While some people buy it frequently for its health benefits, others stay away as they are unsure of how to include it in their diet.

Puddings and milkshakes are perhaps the most popular preparations of avocado, but you will soon tire of it, if you keep repeating the same recipes.

So, here, we present a tasteful Avocado Salad in which the smooth texture of the fruit is smartly complemented by crunchy, juicy and tangy veggies, and a minty honey dressing.

1 cup sliced avocados
1/2 cup sliced capsicum
1/2 cup tomato strips , deseeded
1 cup sliced and blanched baby corn
1/2 cup cucumber strips

To Be Mixed Into A Dressing
2 tbsp honey
3/4 tbsp lemon juice
2 tsp finely chopped mint leaves (phudina)
salt and to taste

  1. Combine the all the ingredients in a deep bowl and mix well.
  2. Add the dressing and toss well.
  3. Serve immediately.

Preparation for Avocado salad

  1. To prepare avocado salad, cut an avocado in halves. Also, discard any bruised, browned areas from the avocado. Buy avocados that are ripe and avoid using over-riped avocados that are mushy on the inside. To pick right avocado, place it in your palm and give it a light squeeze. If it has a slight resistance, with no soft spots then it’s ready.
  2. Remove the seed and make cuts on the avocado flesh using a sharp knife.
  3. Gently remove the skin from the avocados.
  4. Cut them into slices using a sharp knife.
  5. Then cut each slice into 2 using a sharp knife.
  6. Cut and keep all the vegetables ready. Keep aside.

For the dressing

  1. To prepare the dressing for avocado salad, in a small bowl take honey. I personally love using organic honey which is naturally extracted, nice and thick in consistency.
  2. Add lemon juice. Lemon will punch in the acidity required to balance the sweetness from honey and prevent browning and oxidation of avocado salad. It can be substituted with vinegar.
  3. Add finely chopped mint leaves for a refreshing flavour. Mint and tomato increase the folic acid and vitamin A content of this avocado salad recipe.
  4. Add salt.
  5. Add the black pepper to taste. Adding salt enhances other flavors so season the dressing well. We are not adding chilli flakes, paprika powder, chilli powder or finely chopped green chillies for heat. We want the avocado salad to get the required heat from pepper powder so, ensure you ground it fresh to extract maximum flavor.
  6. Mix well and keep aside.

How to make avocado salad

  1. To prepare the avocado salad, in a deep bowl add capsicum.  For a vibrant look, add some bell peppers if you like.
  2. Add tomato strips. We have used deseeded tomatoes as we want this salad to be slightly crunchy and not lose its bite due to the juices from tomatoes.
  3. Add sliced and blanched baby corn.

Perfect healthy salad. Avacados are healthy and are high in good fats. I skipped the baby corn in the recipe to make it healthy. Toss in some flax seeds and pumpkin seeds to top it off.
