To make bajra dhebra, combine the jaggery and curd in a small bowl and mix well. Combine all the ingredients along with jaggery-curd mixture in a deep bowl and knead into a semi- soft dough using enough water. Divide the dough into 40 equal portions. Pat a portion of the dough into a 25 mm. (1”) diameter and 1 cm thick circle in between your palms. Heat the oil in a deep non-stick pan and deep-fry a few dhebras at a time on a medium low flame till they turn golden brown in colour from both the sides. Drain on an absorbent paper. You can deep-fry 6 to 7 dhebras at a time. Serve immediately or store in an air-tight container and consume within 2 days.

For preparing methi leaves for bajra methi dhebra

  2. Add 1/4 cup whole wheat flour (gehun ka atta) also. 
  3. Add 3/4 cup finely chopped fenugreek (methi)
  4. Add 1/2 tsp ginger (adrak) paste.
  5. Add 1 tsp green chilli paste.
  6. Add 1 tsp garlic (lehsun) paste.
  7. Add masalas now. First add 1/2 turmeric powder (haldi).
  8. Add 1/2 tsp red chilli powder.
  9. Add 1/2 tsp coriander (dhania) powder.
  10. Add 1 1/2 tbsp sesame seeds (til). Also called as ‘til’, these tiny seeds add in contrating colour and amazing flavour to methi na dhebra.
  11. Add 1 tbsp oil
  12. Add salt to taste.
  13. Finally add the prepared curd-jaggery mixture. 
  14. Mix all the ingredients well using your finger tips. 
  15. Knead into a semi- soft dough using enough water. If the dough is too soft or hard, shaping the dhebra is difficult. 

For making bajra methi dhebra

  1. Divide the dough of bajra dhebra recipe | bajra methi dhebra | methi na dhebra | Gujarati snack recipe into 40 equal portions.
  2. Pat a portion of the dough into a 25 mm. (1”) diameter and 1 cm thick circle in between your palms. If you finding shaping difficult, grease your hands with little oil. 
  3. Heat the oil in a deep non-stick pan and add a few dhebras at a time in the hot oil. Deep-fry the dhebras on a medium low flame till they turn golden brown in colour from both the sides. You can deep-fry 6 to 7 dhebras at a time.
  4. Drain on an absorbent paper.
