1 cup chopped fenugreek (methi)
5 tbsp whole wheat flour (gehun ka atta)
1/4 cup besan (bengal gram flour)
1 tsp ginger-green chilli paste
1 tsp lemon juice
1/4 tsp turmeric powder (haldi)
1/4 tsp chilli powder
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp oil
salt to taste
1/2 tsp oil for greasing

  1. To make baked methi muthias, combine all the ingredients in a deep bowl and knead it into a soft dough using approx. ¼ cup of water.
  2. Divide the dough into 12 equal portions, shape each portion roughly into an oval by rolling it between your palms and fingers.
  3. Grease a baking tray with ½ tsp of oil and place them on a baking tray and bake in a pre-heated oven at 180°c (360°f) for 10 minutes, turn them over and bake them again for 5 minutes.
  4. Serve the baked methi muthias immediately with healthy green chutney.

Method For Baked Methi Muthia

  1. For preparing the Baked Methi Muthiya dough, main ingredient is fenugreek leaves. It has a lot of health benefits
  2. Separate the fenugreek leaves from the stem and roughly chop them.
  3. Transfer the methi leaves to a bowl.
  4. Add whole wheat flour.
  5. Add the besan. You can also add jowar, bajra or ragi flour to the Baked Methi Muthia dough
  6. Add the ginger-green chilli paste. You can adjust the spice according to your preference.
  7. Add lemon juice. It is one of the main ingredients of the dish, it gives it a tangy taste. 
  8. Add the turmeric powder. Add the chilli powder. If you want the methi muthiya spicier then add more chilli powder.
  9. Add corainder cumin seed powder. 
  10. Add salt to taste. 
  11. Add approx. 1/4  cup of water. Combine all the ingredients.
  12. Knead into a soft dough. If the dough is very sticky, then add little chickpea flour.

Method for Baking Methi Muthia

  1. For baking the Baked Methi Muthia, divide the mixture into 12 equal portions. If you are facing difficulty then grease your hand with oil and then start shaping it.
  2. Shape each portion roughly into an oval by rolling it between your palms and fingers.
  3. Grease the baking tray with oil. 
  4. Place the Methi Muthia on the greased baking tray.
  5. Bake in a pre-heated oven at 180°c (360°f) for 10 mins. 
  6. Turn the Methi Muthia over and bake them again for 5 minutes.
  7. Serve the Baked Methi Muthia Immediately with healthy green chutney.

I made this muthias to use in some vegetable...as i was not very keen to have deep-fried one's...and i just loved it!!....it is not only low cal but full of nutrients like Iron and Vitamin A.
