  1. Heat the oil in a deep non-stick pan, add the mustard seeds, cumin seeds and curry leaves and sauté on a medium flame for 30 seconds.
  2. Add the garlic and sauté on a medium flame for 30 seconds.
  3. Add the pumpkin cubes, turmeric powder, chilli powder, garam masala, salt and ½ cup of water and mix well. Cover with a lid and cook on a medium flame for 12 minutes, while stirring occasionally.
  4. Serve hot garnished with coriander.

This Maharashtrian recipe is so good in taste and also very easy to make. The use of pumpkin along with masalas and garlic make it an outstanding subzi. I serve this with Bhakri for a complete meal.
