Ingredients


For The Chillas
1 cup besan (bengal gram flour)
a pinch of asafoetida (hing)
1 tsp chilli powder
salt to taste
oil for greasing and cooking

Other Ingredients For The Chilla Chaat
1/4 cup finely chopped spring onions whites and greens
1/2 cup khajur imli ki chutney
1/4 cup green chutney
1/4 cup sev

For The Garnish
2 tbsp finely chopped coriander (dhania)

Method
For the chillas

    For the chillas
  1. Combine all the ingredients along with approx. ¾ cup of water in a deep bowl and mix very well using a whisk till no lumps remain.
  2. Heat a non-stick tava (griddle) and grease it lightly using oil.
  3. Sprinkle a little water on the tava (griddle) and wipe it off gently using a cloth.
  4. Pour a ladleful of the batter on it and spread it in a circular motion to make a 175 mm. (7”) diameter circle.
  5. Smear a little oil over it and along the edges and cook on a high flame till the chilla turns brown in colour and crisp.
  6. Flip over and cook on the other side as well.
  7. Repeat steps 2 to 6 to make 3 more chillas.
  8. Cut each chilla into 1” square pieces and keep aside.
