  1. Heat a grill pan with 2 tsp of olive oil and arrange 8 slices on it and cook on a medium flame for 4 to 5 minutes or till it becomes light brown in colour from both the sides.
  2. Transfer them on a serving plate and drizzle the remaining 1 tsp of olive oil and sea salt evenly over all the grilled brinjal slices.
  3. Serve immediately.

I''m personally not a lover of Baigan but grilling it in olive oil and topping it with sea salt transforms this simple vegetable into a great starter. What''s better is that this recipe is extremely healthy as Baigan is low GI vegetable and olive oil is a good fat. So i have become an addict of this recipe!!
