I''m personally not a lover of Baigan but grilling it in olive oil and topping it with sea salt transforms this simple vegetable into a great starter. What''s better is that this recipe is extremely healthy as Baigan is low GI vegetable and olive oil is a good fat. So i have become an addict of this recipe!!
