Ingredients

3 tbsp ghee
1/2 cup broken vermicelli (sevaiyan)
2 cups hot full-fat milk
3/4 cup sugar
2 to 3 saffron (kesar) strands , optional
1/2 tsp cardamom (elaichi) powder

For The Garnish
1 tbsp almond (badam) slivers

Method
    Method
  1. Heat the ghee in a kadhai, add the vermicelli and sauté on a slow flame for 3 to 4 minutes or till the vermicelli is light pink in colour.
  2. Add 1 cup of water and 1/4 cup of milk, mix well and cook on a medium flame for 4 to 5 minutes or till the vermicelli is cooked, while stirring continuously.
  3. Add the sugar and remaining 1 3/4 cups of milk, mix well and cook on a slow flame for 2 to 3 minutes, while stirring continuously.
  4. Add the cardamom powder, mix well and cook on a slow flame for 1 to 2 minutes.
  5. Serve immediately garnished with slivered almonds.

While on step 2( the water with milk) my milk curdled. Can anyone help?

Sevaiyan. .kheer this is my favourite .. and quick to make it. This is perfect desert for a Indian meal.. The sevaiyan is perfectly cooked in milk.. with proper sweetness..
