Hollow centres of boiled potatoes are filled with a tangy baked beans mixture and topped with gooey cream cheese. Ingredients


For The Potatoes
4 boiled potatoes (unpeeled)

For The Bean Topping
3/4 cup baked beans
1 tbsp butter
1/4 cup finely chopped onions
1/2 tsp chilli powder
2 tbsp tomato ketchup
salt to taste

To Be Mixed Together For Cream Cheese
1/2 cup thick beaten curds (dahi)
1 tbsp fresh cream
1/4 cup grated processed cheese
salt to taste

For The Garnish
a sprig of coriander (dhania)

Method
For the potatoes

  1. Cut each potato horizontally into two.
  2. Scoop the potato halves a little so that a slight depression is formed for the filling. Keep aside.

For the bean topping

  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the baked beans, chilli powder, tomato ketchup and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Divide the topping into 8 equal portions and keep aside.

  1. Fill each potato halve with a portion of the bean topping and a dollop of cream cheese over it.
  2. Serve immediately garnished with a sprig of coriander.

  2. If your child doesn’t like the potato skin you can always peel the potatoes and follow the recipe.
