Ingredients


For Carrot and Spinach Soup
1 1/2 cups peeled and roughly chopped carrot
1/2 cup shredded spinach (palak)
1/2 cup peeled and roughly chopped potatoes
1/2 cup roughly chopped onions
2 tsp butter
1/2 cup finely chopped onions
1/2 cup milk
salt and to taste

Method

For carrot and spinach soup

  1. To make {span class="bold1"}carrot and spinach soup{/span}, combine the carrot, potatoes, roughly chopped onions and 1½ cups of water in a pressure cooker, mix well and pressure cook for 3 whistles.
  2. Allow the steam to escape before opening the lid. Keep aside to cool completely.
  3. Once cooled, blend in a mixer till smooth. Keep aside.
  4. Heat the butter in a deep non-stick kadhai, add the finely chopped onions and sauté on a medium flame for 1 to 2 minutes.
  5. Add the spinach, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  6. Add the carrot-potato mixture and approx. ¼ of cup water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  7. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  8. Add the salt and pepper, mix well and cook on a slow flame for 5 to 10 minutes, while stirring occasionally.
  9. Serve the {span class="bold1"}carrot and spinach soup{/span} hot.
