The Broccoli Broth is a really quick soup to make, and one which does not require you to hunt for umpteen ingredients. Broccoli is one of the best sources of antixodants like vitamin A and folic acid, which makes it a wonder food during pregnancy. Ingredients


For Broccoli Soup
1 cup broccoli florets
1 tsp oil
1/2 cup chopped onions
1/2 cup milk
salt and to taste

Method

For broccoli soup

  1. To make {span class="bold1"}broccoli soup{/span}, heat the oil in a deep non-stick pan, add the onion and sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.
  2. Add the broccoli and 1½ cups of water and mix well. Cover with a lid and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Keep aside to cool slightly.
  3. Blend the mixture in a mixer to a smooth purée.
  4. Transfer the purée back into the same deep non-stick pan, add the milk, salt and pepper, mix well and bring to boil.
  5. Serve the {span class="bold1"}healthy indian broccoli soup without cream{/span} immediately.
