Readily available khari biscuits make a great base for these dainty, delectable tarts. With a nice topping of vegetables, tomato, cheese and oregano, they make ideal, non-messy finger foods. Just serve them and watch your kids enjoy it all by themselves.

Ingredients


For The Vegetable Topping
1 tbsp oil
1/4 cup finely chopped spring onions whites
1/4 cup finely chopped spring onion greens
1/4 cup finely chopped carrots
1/4 cup finely chopped cabbage
1/4 cup finely chopped capsicum
1 tbsp tomato ketchup
1 tbsp chilli-garlic sauce
salt to taste

Other Ingredients
16 small thin round - shaped khari biscuits
16 thinly sliced tomatoes
2 tsp olive oil
salt and freshly ground black peppercorns (kalimirch) to taste
8 tbsp grated mozzrella cheese
1 tsp dried oregano

Method

For the vegetable topping

  1. Heat the oil in a broad non–stick pan and add the spring onion whites, spring onion greens, carrot, cabbage and capsicum and sauté on medium flame for 2 to 3 minutes.
  2. Add tomato ketchup, chilli-garlic sauce and salt and sauté on medium flame for 2 minutes. Keep aside.

How to proceed

  1. Brush the tomato slices with a little olive oil and sprinkle a little salt and pepper over them. Keep aside.
  2. Arrange the khari biscuits on a non-greased baking tray and spread a portion of the vegetable mixture on each khari biscuit.
  3. Place a tomato slice and sprinkle ½ tbsp of cheese over each khari biscuit.
  4. Bake in a pre-heated oven at 200ºc (400ºf) for 10 to 12 minutes or till the cheese melts.
  5. Remove from the oven and sprinkle a little oregano on each khari biscuits.
  6. Serve immediately.
