Recipe Notes for Cream of Spinach Soup-
While adding milk to any soup always remember the temperature of the soup and milk should be same, i.e. hot is to hot and cold is to cold or else the milk will split.

Preparation for creamy spinach soup-
For preparing the creamy spinach soup, take a bunch of spinach.

Remove the thick stem and discard it. Separate the fresh, green leaves aside.

Finely chop the spinach leaves using a sharp knife.

For the cornflour slurry, in a small bowl, take cornflour.

Add cold milk to the cornflour.

Add the fresh cream and whisk well to form a lump-free slurry. Mix well till no lumps remain. Keep this cornflour-milk-cream mixture aside.
How to make cream of spinach soup-
To prepare the cream of spinach soup, heat the butter in a deep non-stick kadhai. Alternatively, you can make use of any neutral flavored oil or olive oil.

Add the onions. Also, you can add garlic if you like.

Sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.

Add the chopped spinach.

Sauté the spinach on a medium flame for 1 minute. If cooked for more time, there will be nutrient and colour loss.

Add 2 cups of water.

Mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally.

Allow it to cool completely. Once cooled, transfer to a mixer jar.

Blend in a mixer to a smooth purée. Depending upon the size of your mixer jar, you might have to puree it in batches.

Strain the spinach purée with help of a sieve.

Transfer the sifted spinach puree to a kadhai. Add the cornflour-milk-cream mixture to the spinach purée.

Mix cream of spinach soup (cream of palak soup) well and cook on a medium flame for 2 minutes, while stirring occasionally.

Add the salt and pepper to cream of spinach soup (cream of palak soup).

Mix cream of spinach soup (cream of palak soup) well and cook on a medium flame for 1 more minute, while stirring occasionally.
