To make Dal Khichdi:-
To make the khichdi recipe | dal khichdi | toor dal khichdi | how to make dal khichdi, first wash the toovar dal in enough water.

Drain the dal using a strainer.

Similarly, wash the rice in enough water and drain using a strainer.

Take a pressure cooker and add the dal to it. We have used toor dal, but many people use a combination of moong dal, toor dal or masoor dal.

Add the rice as well. Dal khichdi is essentially a dish made by cooking dal and rice together.

Then add the turmeric powder for a little taste and color.

Add ¼ tsp asafoetida. Asafoetida, also known as hing, gives a unique savory taste to the dal khichdi.

Add some salt to taste.

Finally add 5 cups of water to the pressure cooker and mix well.

Pressure cook the dal and rice for 3 whistles. Allow the steam to escape naturally before opening the lid. Keep aside.

To make the Dal khichdi, heat the ghee in a deep non-stick kadhai or pan. If you do not want to add ghee, you can even add oil but ghee adds a better flavor.

Now we will add the whole spices. First add the cloves.

Then, add the cinnamon.

Also, add the whole peppercorns for a deep, peppery flavor.

Now add the red chillies for color and spice.

And finally add the cumin seeds. These are the usual spices that are added to a Dal khichdi preparation.

Mix well and sauté on a medium flame for a few seconds, just till the spices release their flavor and aroma in the oil.

Add the remaining ¼ tsp of asafoetida to the ghee.

Then add the green chillies for spice. The chillies are split so that they don’t come in the way while eating.

Then, add the curry leaves.

Also add the garlic.This will perk up the flavour of the Dal Khichdi.

Then finally add the onions for pungency. If you want to make this recipe jain, you can avoid the onions and the garlic.

Mix well and sauté on a medium flame for 1 minute. Do not burn the onions and garlic, they just have to turn a little translucent.

Now add the tomatoes. Make sure that you use fresh and red tomatoes for this recipe.

Also, add a little chilli powder with it.

Add a little salt to release the water from the tomatoes so that they do not burn.

Mix well and sauté on a medium flame for another 1-2 minutes.

Add the cooked rice-dal mixture to this.

Add about 1¼ cups water to the Dal Khichdi at this stage.

Mix khichdi recipe | dal khichdi | toor dal khichdi well and cook on a medium flame for 2 minutes, while stirring occasionally.

Ingredients for moong dal khichdi
1 cup yellow moong dal (split yellow gram)
1 cup rice (chawal)
1/2 tsp turmeric powder (haldi)
10 black peppercorns (kalimirch)
salt to taste
2 1/2 tbsp ghee
Method for moong dal khichdi

Wash and soak the dal and rice together in enough water for at least 30 minutes. Drain and keep aside.

Combine the dal and rice with the turmeric powder, peppercorns, salt and 4½ cups of water in a pressure cooker and pressure cook for 4 whistles.

Allow the steam to escape before opening the lid.

Just before serving, add the ghee and mix well.

Serve moong dal khichdi hot with kadhi and papad.
