For Eggless Banana Muffins
1 cup ripped mashed banana
1 1/2 cups plain flour (maida)
1 cup powdered sugar
1/3 cup oil
1/2 tsp vanilla extract
1/4 tsp cinnamon (dalchini) powder
1/8 tsp nutmeg (jaiphal) powder
5 tbsp milk
1 tsp baking powder
1/2 tsp baking soda

Method

For eggless banana muffins

  1. To make {span class="bold1"}banana muffins{/span}, in a deep bowl, add mashed bananas, oil, sugar, vanilla extract, milk, cinnamon powder and nutmeg powder. Whisk well.
  2. Sieve plain flour, baking powder and baking soda. Mix well to form a dropping consistency batter.
  3. Pour equal quantities of batter in a lined muffin tray. Tap it twice to remove the air bubbles.
  4. Bake in a pre-heated oven at 180°c (360°f) for 15 minutes or until done.
  5. Remove and cool slightly. Serve the {span class="bold1"}banana muffins{/span} warm.
