Tiring and long day? We have got a simple and quick recipe which is ek top na dal bhaat. As the name suggest, the recipe is a one pot meal which are obviously quicker to prepare and cook. Ek top means one pot and dal bhaat stands for dal rice.

The recipe is really easy to make, we have used a lot of ingredients for preparation of ek handi dal chawal, yet the ingredients are easily available in well maintained Indian household pantries.

To make ek top na dal bhaat, first we have made a mixture which will be a stuffing for the vegetables. This recipe is a lot like Sambhariyu Shaak and is also unique in it's own way and is tummy filling too. To make the mixture, combine coriander-cumin seed powder, sugar you can also use jaggery if you wish to, red chilli powder, coconut and a pinch of asafoetida in a bowl, mix well and keep aside. Further, make criss cross cuts on small sized potatoes and brinjals. Next, stuff the masala into the vegatbles evenly and keep the leftover mixture aside. Further, heat 2 tbsp of ghee in a pressure cooker, add the asafoetida, rice, toovar dal and turmeric powder, mix gently and sauté on a medium flame for a minute. Add the prepared masala, onions, stuffed vegetables, green peas, salt and 2½ cups of hot water, mix gently and pressure cook on a high flame for 3 whistles. Allow the steam to escape using natural release method, before opening the lid. Add the remaining 1 tbsp of ghee, mix well and serve immediately. I personally prefer relishing this delicious one pot rice and lentil with homemade curd or a glass of buttermilk.

Ingredients


To Be Mixed Together Into A Masala Mixture
2 tbsp coriander-cumin seeds (dhania-jeera) powder
1 tbsp sugar
1 1/2 tbsp chilli powder
3/4 cup freshly grated coconut
1/3 cup finely chopped coriander (dhania)
a pinch of asafoetida (hing)
salt to taste

5 to 7 small onions , peeled
3 to 4 small potatoes , peeled
2 to 3 small brinjals (baingan / eggplant)
3 tbsp ghee
a pinch of asafoetida (hing)
1 cup short grained rice (chawal) , soaked for 1 hour and drained
1/3 cup toovar (arhar) dal , soaked for 1 hour and drained
1/4 tsp turmeric powder (haldi)
1/4 cup green peas
salt to taste

Method
For ek top na dal bhaat

  1. Make criss-cross slits on the, potatoes and brinjals taking care not to separate the segments.
  2. Stuff each of the potatoes and brinjals evenly using the prepared masala mixture. Keep aside.
  3. Heat 2 tbsp of ghee in a pressure cooker, add the asafoetida, rice, toovar dal and turmeric powder, mix gently and sauté on a medium flame for a minute.
  4. Add the prepared masala, onions, stuffed vegetables, green peas, salt and 2½ cups of hot water, mix gently and pressure cook on a high flame for 3 whistles.
  5. Allow the steam to escape using natural release method, (refer handy tip) before opening the lid.
  6. Add the remaining 1 tbsp of ghee, mix well and serve ek top na dal bhaat immediately.

    Handy tip:
  1. Natural release method: to use this method, remove the pressure cooker from the hot burner and let the pressure drop by cooling down naturally.
  2. It works best for grains and for beans that you might use for salads, as quick-releasing the pressure can cause the beans to split apart.

  1. For making the wholesome ek toap na dal bhat, we will be stuffing some vegetables with spices, coconut and coriander. To make that masala mixture, in a bowl take coriander-cumin seeds powder.
  2. Add sugar. You can even make use of finely chopped jaggery.
  3. Add chilli powder as per the spice you like.
  4. Add some freshly grated coconut.
  5. Furthermore, add finely chopped coriander.
  6. Add a pinch of asafoetida.
  7. Season with salt as per taste.
  8. Mix everything well and our masala mixture for stuffing vegetables is ready.

  2. Similarly, make criss-cross cuts on the brinjals, taking care not to separate the segments
  3. Stuff little stuffing each of the potatoes and brinjals evenly using the prepared masala mixture. Keep aside. There will be little masala remaining. We will be using that in the recipe as well.

  2. Add enough water and wash it well.
  3. Drain it using a strainer.
  4. Add more water.
  5. Cover it with a id and soak for 1 hour.
  6. Also, pick and clean the arhar dal.
  7. Wash it under running water.
  8. Add more water. Cover it with a lid and soak for 1 hour.
  9. This is how the rice looks after soaking.
  10. Drain it and keep aside.
  11. This is how arhar dal looks after soaking.
  12. Drain it and keep aside.
  13. For making one pot dal rice, heat 2 tbsp of ghee in a pressure cooker.
  14. When the ghee melts, add asafoetida. You can even temper the dal bhat with cumin seeds, mustard seeds and curry leaves if you like.
  15. Drain the rice and add to the pressure cooker.
  16. Similarly, drain the toovar dal before adding to the pressure cooker.
  17. Add turmeric powder.
  18. Sauté on a medium flame for a minute.
  19. Add the remaining masala.
  20. Sauté on a medium flame for a minute.
  21. Add the stuffed vegetables and onions.
  22. Add green peas. We have used frozen green peas. You can make use of fresh if available. You can even add other veggies like corn, carrot, french beans if you like.
  23. Add salt and 2½ cups of hot water. Hot water fastens the cooking process.
  24. Mix gently or else the vegetables might break and disintegrate.
  25. Pressure cook on a high flame for 3 whistles. Allow the steam to escape using natural release method, before opening the lid. Natural release method means removing the pressure cooker from the hot burner and let the pressure drop by cooling down naturally.
  26. Add the remaining 1 tbsp of ghee to the dal bhat.
  27. Mix well and serve Ek top na dal bhaat | one pot dal bhaat  | ek handi dal chawal | vegetable dal rice pulao | one pot rice and lentil | immediately.
