Ingredients
1 cup maize flour (makai ka atta)
1 tbsp oil
3 tbsp finely chopped coriander (dhania)
1 tsp finely chopped green chillies
2 tsp finely chopped garlic (lehsun)
salt to taste
rice flour (chawal ka atta) for rolling
oil for greasing and cooking

    Method
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough warm water.
  2. Divide the dough into 6 equal portions and roll each portion into a 100 mm. (4”) diameter circle using little rice flour for rolling.
  3. Heat a non-stick tava (griddle) and cook each roti, using a little oil, till it turns golden brown in colour from both sides.
  4. Serve hot with fresh curds and pickle.

  1. Maize flour also called as corn meal and Makai ka atta. It is yellow coloured flour with coarse texture. Corn meal is made by grinding corn kernels into a coarse powder. Unlike cornstarch, processing cornmeal doesn’t involve the separation of bran, germ and endosperm, so you are able to retain more of the nutrients in the corn than with, say, cornstarch.

  1. In a deep glass bowl put 1 cup maize flour (makai ka atta).
  2. Add 1 tbls oil.
  3. Add 3 tbsp finely chopped coriander (dhania).
  4. Add 1 tsp finely chopped green chillies.
  5. Add 2 tsp garlic paste or 2 tsp finely chopped garlic (lehsun). Using garlic paste gives a richer taste in the roti.
  6. Add salt to taste. We added 1/2 tsp salt.
  7. Add enough warm water. Add 1/2 cup warm water plus 1 tablespoon water.
  8. If you find it difficult to roll add 3 tbls plain flour. NOTE, we added the plain flour. You can also use whole wheat flour but you would have to use 1/4 cup whole wheat flour.
  9. Knead into a soft dough. There is no need to rest the dough.

  2. Faltten the dough, dip into rice flour so both sides have been quoted with rice flour and place on a rolling board.
  3. Roll each portion into a 100 mm. (4”) diameter circle using little rice flour for rolling. You will have to keep turning the rolling board as you roll the roti. Also keep applying a little rice flour while gently rolling the roti. Rolling a makai roti is not easy and mistakes can happen and your roti could tear. But you will get it right with some practise.
  4. Greae a hot non-stick tava (griddle).
  5. Place the roti on the tava.
  6. Cook the bottom of the roti for 1 minute on a medium flame.
  7. Then grease the top uncooked roti.
  8. Flip over and cook the other side of the roti in the same way. Our garlic makai roti is ready to eat.

tips for garlic makai roti

  1. Remember to put the rolled dough into a bowl of rice flour and quote both sides with rice flour. This will prevent the roti from sticking. 
  2. Use a spatula to press down all across the roti while it is being cooked.
