Heat a non-stick tava (griddle) and cook each roti, using a little ghee, till they turn golden brown in colour from both the sides. Serve hot.

Rajasthani paratha are eaten throughout the year except in the winters in Rajasthan when bajra rotis are preferred. Made with the right proportion of wheat flour and besan, they fuse together well to give a perfect texture.

A dough made with carom seeds forms the base of this masala besan roti. Apart from adding flavour and aroma, it is also added for its digestive properties. Cooked with ghee it brings forth the taste of authentic Marwari cuisine.

a pinch of asafoetida (hing)

1 finely chopped green chillies
4 tsp melted ghee

  6. Add salt to taste.
  7. Add 4 tsp melted ghee.
  8. Add 1 finely chopped green chilli. This gives a little spice to the roti.
  9. Mix all the ingredients for Rajasthani paratha very well using your fingertips. 
  10. Add enough water to knead into a stiff dough. We have used 3/4 cup of water plus 1 tablespoon. The amount of water you use depends on the quality of the flour.
  11. Knead into a stiff dough.
  12. Roll the dough into a cylinderical shape as its easy to make 10 balls out of it.
  13. Divide the dough into 10 equal portions.
  14. Roll out each portion into a 100 mm. (4") diameter circle using a little whole wheat flour for rolling.
  15. Heat a non-stick tava (griddle) and place a masala besan roti on it. At this point no ghee is used. Cook for a bit.
  16. Allow it to cook on one side and then turn it over. 
  17. Apply a little ghee on the roti and allow it to cook.
  18. Again turnover Rajasthani missi roti | Rajasthani paratha | masala besan roti | missi roti on tava dhaba style | and apply a little ghee.
