Grilled Feta and Pita Salad

Feta cheese, onions, tomatoes, cucumber, lettuce, olives, and parsley are combined and drizzled with roasted garlic dressing. A small portion of the salad is placed over grilled pita triangles to make a quick salad.

4 pita bread breads
1/4 cup thinly sliced onions
1/2 cup thinly sliced tomatoes
1/2 cup cucumber strips
1/2 cup torn mix lettuce
2 tbsp chopped cherry tomatoes
2 tbsp black olives
1 cup feta cheese cubes
1 tbsp chopped parsley

To Be Mixed Together For The Dressing
2 roasted garlic (lehsun) cloves , chopped
1 tbsp olive oil
2 tbsp lemon juice
salt and freshly ground black pepper powder to taste

  1. Grill the pita bread and cut each bread into 3 triangles. Keep aside.
  2. Combine the vegetables and feta cheese with parsley and mix well.
  3. Drizzle the dressing over the salad and toss well.
  4. Arrange a portion of the salad on the grilled pita breads and serve immediately.
