For the paste-
For making the paste for South Indian vegetable curry, heat a broad non-stick pan, add the coconut.

Next, add curry leaves.

Add roughly chopped green chillies and garlic.

Also, add 1 stick cinnamon, 1 clove, 2 black peppercorns, 1 whole dry kashmiri red chilli in the pan.

Dry roast all the ingredients on a medium flame for 4 minutes or till they are slightly brown and aromatic.

Remove from the flame and cool slightly.

Transfer the paste to a mixer jar.

Blend in a mixer till smooth using ½ cup of water. Keep aside.
How to make Malabari curry-
To prepare the Malabari vegetable curry, heat the oil in a deep non-stick kadhai. We have used regular vegetable oil but, you can use coconut oil or even butter or ghee for preparing the South-Indian vegetable curry.

Once the oil is hot, add the onions.

Sauté them on a medium flame for 2 minutes or until the onions soften and turn light golden.

Add the tomatoes.

Mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

Add all the vegetables starting with French beans.

Next, add the carrot cubes.

Add the cauliflower florets.

Also, add the potato cubes.You can use any vegetables of your choice and liking depending upon the availability.

Mix well and sauté on a medium flame for 2 minutes.

Add 1 cup of water and salt.

Mix well and cover with a lid and cook on a medium flame for 10 minutes, while stirring occasionally.

Add the prepared paste.

Add ¼ cup of water. Adjust the consistency of the curry as per your desire.
